Ingredients
- Beef mince 95% lean, raw150 g
- Kidney beans, cooked & drained100 g
- Rice, cooked100 g
- Chopped tomatoes150 g
- Bell pepper100 g
- Skyr or low-fat yoghurt80 g
- Cumin½ tsp
- Paprika1 tsp
- Chilli, salt, pepper, lime juiceto taste
How to make it
- Dice the pepper.
- Brown the beef mince in a non-stick pan over medium-high heat until crumbly.
- Add the pepper and cook for 3–4 min.
- Stir in the chilli, cumin, paprika, salt and pepper.
- Add the tomatoes and kidney beans and simmer for 8–10 min.
- Put the cooked rice in a bowl and spoon over the beef-bean mix.
- Stir the skyr with lime juice, salt and pepper and add as a topping.
