Oven Salmon with Lemon Quark

Ingredients
- Salmon fillet150 g
- Broccoli200 g
- Bell pepper or zucchini150 g
- Low-fat quark150 g
- Olive oil5 g
- Lemon½
- Garlic1 small clove
- Dill or parsleyto taste
- Salt, pepperto taste
How to make it
- Preheat the oven to 200 °C (conventional).
- Cut the broccoli into florets and the pepper or zucchini into bite-sized pieces.
- Spread the veg on a tray and toss with olive oil, salt, pepper and a little lemon juice.
- Season the salmon with salt and pepper and set it on the veg.
- Bake for 18–22 min until the salmon is juicy and the veg still has bite.
- Stir the quark with lemon juice, zest, dill, crushed garlic, salt and pepper.
- Serve the salmon and veg with the lemon quark.
