Pan-Fried Salmon with Sweet Potato

Ingredients

  • Salmon fillet150 g
  • Sweet potato150 g
  • Broccoli250 g
  • Extra virgin olive oil5 g
  • Lemon½
  • Dill (fresh)to taste
  • Garlic1 clove
  • Salt, pepperto taste

How to make it

  1. Preheat the oven to 200 °C. Cut the sweet potato into 1.5 cm cubes, toss with oil and salt and roast for 20–25 minutes.
  2. Break the broccoli into florets and fry it in the pan with oil and garlic for 6–8 minutes — it stays crisp-tender.
  3. Salt the salmon, fry it in a pan over medium heat skin-side down for 3–4 minutes, then flip and finish for 2–3 minutes. The center may stay glassy.
  4. Add the lemon and dill and plate everything together.

My tip: Take a 10-minute walk after eating — it smooths out your blood sugar and you'll feel lighter.
