Pan-Fried Salmon with Sweet Potato
Juicy salmon, roasted sweet potato and crisp-tender broccoli — cooked in parallel and on the plate in just over half an hour.

Ingredients
- Salmon fillet150 g
- Sweet potato150 g
- Broccoli250 g
- Extra virgin olive oil5 g
- Lemon½
- Dill (fresh)to taste
- Garlic1 clove
- Salt, pepperto taste
How to make it
- Preheat the oven to 200 °C. Cut the sweet potato into 1.5 cm cubes, toss with oil and salt and roast for 20–25 minutes.
- Break the broccoli into florets and fry it in the pan with oil and garlic for 6–8 minutes — it stays crisp-tender.
- Salt the salmon, fry it in a pan over medium heat skin-side down for 3–4 minutes, then flip and finish for 2–3 minutes. The center may stay glassy.
- Add the lemon and dill and plate everything together.
My tip: Take a 10-minute walk after eating — it smooths out your blood sugar and you'll feel lighter.
